Pineapple Cake Filling

Pair this easy, refreshing pineapple filling with a coconut cake for a pina colada cake or vanilla cake.



Makes 2 cups

  • 1 20oz can of Dole crushed pineapple

  • 1/2 cup of granulated sugar

  • 1/8 tsp salt

  • 1 tbsp cornstarch

  • 1 tbsp water


  1. Whisk the cornstarch and water in a small bowl to create a slurry.

  2. Add the crushed pineapples, sugar, salt, and cornstarch slurry in a small saucepan. Bring to a boil, then reduce to med-low heat. Let it simmer until it has thickened (approx. 3 - 5 mins). Stir occasionally.

  3. Remove from heat, and let it cool completely before using.


  • You may purchase chunks, tidbits, or slices if you can't find crushed pineapple. Then, process the pineapple in a food processor before cooking.

  • Adjust the sugar amount for the level of sweetness desired.
